Cenizo Mezcal

Cenizo (Agave durangensis) is Durango's signature wild agave and the foundation of the most distinctive non-Oaxacan mezcal tradition in Mexico. Cenizo runs dry, mineral, and savory – the agave's natural register has nothing to do with Oaxacan sweetness, and tasting one is the cleanest way to feel how big the mezcal category actually is. The plant matures in 8-12 years and produces denser fermentation than most karwinskii-family wild agaves. For a starter, Derrumbes Durango is the canonical entry.
