Salmiana (Agave salmiana) anchors the cleanest non-Oaxacan mezcal tradition in Mexico. San Luis Potosí altitude, ten to fifteen years to maturity, vegetal-mineral with a sharp herbal lift – nothing about salmiana reads sweet. That register is the point. Derrumbes, Legendario Domingo, Metiche, and Machetazo anchor the producer pool. Bottles run $45-$80 for serious work; the dollar-per-experience math is unusually strong here for drinkers who already know they don't want Oaxacan sweetness.
