Mezcal from San Baltazar Chichicapam, Oaxaca

San Baltazar Chichicapam is the clearest example of what a single-village designation can do for espadín. The village is best known for Del Maguey Chichicapa – among the longest-running village-named mezcals on the US market – but a dozen producers make bottlings from Chichicapam, all sharing the village's signature: floral, honeyed, mineral, food-friendly. The agave is the same espadín that grows everywhere else in Oaxaca; the soil, water, and producer hands give the village its register.
