Cuishe (Agave karwinskii – also written cuixe by some producers) is one of mezcal's most distinctive wild agaves – vegetal, mineral, dry, with a spine that runs the length of the sip. The plant's name covers a family that includes madrecuishe, bicuishe, tobaziche, and barril, all of which can be bottled separately or in karwinskii ensambles. Cuishe wants 46%+ proof to read fully; below that the agave's signature green-vegetal character goes muted. The bottles below cover solo cuishes and cuishe-led ensambles.
