Tobala Mezcal

Tobalá (Agave potatorum) is mezcal's wild-agave gateway. Smaller than espadín, slower to mature (12-15 years), and impossible to clone at commercial scale. Tobalá's signature is floral and mineral – white flower, river stone, lemon peel – where espadín reads sweet and cooked. Drinkers usually describe their first tobalá as the moment mezcal stopped sounding like one drink and started sounding like a category.
